In tribute to the late-founder Aedan, the guys have introduce their first "South Scottish" whisky, from North British Distillery in Edinburgh.

He was a passionate Scotsman, so wouldn't have had these bottled any other way.

To give a suitably special finish, they chose a Banyuls cask, previously filled with a rare fortified red wine from Coume Des Mas winery near Perpignan in France. Just 29 days have given a remarkable depth of flavour and colour! 

 

Tasting notes from the guys at Fib

On the nose there's Haribo cherries, strawberry laces and glacé cherries too!

You get a lovely whack of rose turkish delight on the tongue, which gives way to a crème brûlée sweetness

The finish leaves you with a mix of sweet red fruit and gently toasted caramel.

 

This dram is a Single Grain Scotch Whisky distilled at the North British distillery and bottled as part of the third series of permutations editions.  Originally filled into a refill bourbon barrel the finished for just 29 days in a 1st fill Banyuls.

Distilled on 02.05.2006 then bottled on 21.01.2025 at 18 Years old, natural cask strength of 53.3% abv giving up only 58 Bottles. 

Due to the limited availability of this whisky we have to limit it to one bottle per customer.

(Banyuls is a sweet, fortified wine from the Roussillon region of France. It's made from Grenache grapes and is similar to Port. Banyuls is often described as rich, fruity, and dark. It can be enjoyed as an aperitif or dessert wine.)
